Sugar Shacks
Spring in Quebec goes with the return of nice weather. Snow is slowly melting, the sun stays with us a little longer to heat up the soil, trees bud and birds are back from the south. Nature slowly comes back to life and the trees also, especially the maple trees. Sap comes up in the trees and when time has come, the trees are tapped to collect the precious nectar. This maple water is then boiled up to make maple syrup or taffy.
The maple syrup producers open their doors for you to eat a delicious traditional Quebec meal in their sugar shack. Come taste a meal composed of ham, potatoes, beans and of course maple syrup pancakes. Some sugar shacks are open year round, like in the regions of Québec and Chaudière-Appalaches. Others are normally open in March and April.
Maple producers now use modern techniques to collect maple water, but in most of the sugar shacks, you will be able to learn the ancient techniques as well as the modern and more rapid ones used nowadays.
